We got a sample pizza at work today and after we'd cooked it up I was walking out of the back eating a piece. This little girl, toddler-age, sees me eating it and stops in her tracks and looks at me amazed.

"P.. p.. peeeetsa ?" she asks.

"Pizza." I reply.

This huge pizza smile breaks out on her face that kills wimps and posers for miles around. "Peeeeetsa !" she yells, and runs away.

Fuck you wimps and posers.

That was actually from a Pixar movie.

Got one of those non-stick pizza pans... You know, the kind with the zillion holes to encrisp the crust. Made a pie with onions & green peppers... The crust came out darkly dark - ever so lightly kissed with burn - just the way I like. Good stuffs!

That pan changed my life.

I have a pizza stone, but I make it better in the cast iron these days. so perfect.

Don't tell anybody, but under all that cheese, etc. is a sauce augmented with chopped sun dried tomatoes, chopped kalamata olives, chopped garlic, red pepper flakes and oregano. Flavor explosions!
