I don't mean to butt in, but I don't think it matters if you use reg. lentils. I'm tempted to make this shit myself this afternoon. I have everything the recipe calls for except for the coconut milk.

Come to think of it, I make a big pot of something similar to this every couple of weeks or so for weekday lunches that I freeze until needed...

Sesame oil isn't something you cook with. Add it last if you use it.

I stopped using recipes for soup. These days it's like this:

sautee onions/garlic until onion is transluscent.
spices: cumin/curry/salt/pepper/mustard
add carrots/lentils/peas/potato/stock/water
bring to boil, then simmer.

let cool and decide to blend or not to blend.

administer freezer baggies and give self a congratulatory hand job.

Currently rockin' a curry powder that has a higher content of anise than usual. Yummie...I also keep a red curry paste on hand...

on the real-i cook every meal and it varies everyday. Today is a new day. Thankfulyy not hung over so i can eat!!!

slightly off topic, but has anyone tried "Snow-apples" before? they're huge, pure white turnips that are fairly sweet and juicy.
Almost like a 60% turnip, 40% asian pear or something... maybe 70/30.

Sweaty is sick so I put extra garlic and ginger in it, turned out awesome.

2 cups red lentils
6 cups water
5 slices of ginger
1 tbs peanut oil or canola oil
1 1/2 cups chopped onion
1 1/2 tesp ground cumin
3 big cloves of garlic, minced, pressed, smashed
decent amount of salt
1 can of coconut milk (14 oz)
2 1/2 tbs fresh lime juice

combine lentils, water, and ginger in a soup pot and boil. once boiling lower heat to a simmer, cook uncovered for 20 or 30 minutes til lentils are soft.

meanwhile, in a skillet add oil, coat pan, add onion, cumin, and salt. cook for about 10 minutes, moving around until onions are translucent. add garlic, cook for another 5 or so.

take all that stuff and put it in the pot with the lentils, pour in can of coconut milk. stir. simmer for 15 minutes or so partly covered. then add the lime juice and any additional salt needed.

I added carrots to mine!
