My every day knife is now a Opinel 6 carbon steel. Easy to sharpen, light, and not made in china.

Great knife, but its not stainless. Its about $7.25 online, but with shipping you're looking at $13 for a #6. I like em, but its a cutting tool esp for garden and food not a prybar like other modern knives.

Not stainless? Big deal, as long as you're not dealing with salt water and you take care of it it's not gonna be a problem; the high carbon content is why it sharpens so nicely.

EDIT: My 'Opinel' is a French Douk Douk, light, sharpens easy, and is as slim as the breeze.

It's a production version (made by Buck) of a "hard use" custom knife (the Strider SNG) that's aimed at the military/law enforcement/mall ninja markets. It's big, cuts wood up like a chainsaw, the ergonomics with the finger groove on the blade and the notches on the back of the blade make it dance in the hand, it locks up rock solid with no blade play, and the oversize thumb hole makes it just jump open.
