OK. I actually started the roasting of all except the brussel sprouts. I boiled them whole for a but to soften them up then cut them in half and added to roast. Roasting just caramelizes everything and it gets all crispy and butter. so good.

2 cups red lentils
6 cups water
5 slices of ginger
1 tbs peanut oil or canola oil
1 1/2 cups chopped onion
1 1/2 tesp ground cumin
3 big cloves of garlic, minced, pressed, smashed
decent amount of salt
1 can of coconut milk (14 oz)
2 1/2 tbs fresh lime juice
combine lentils, water, and ginger in a soup pot and boil. once boiling lower heat to a simmer, cook uncovered for 20 or 30 minutes til lentils are soft.
meanwhile, in a skillet add oil, coat pan, add onion, cumin, and salt. cook for about 10 minutes, moving around until onions are translucent. add garlic, cook for another 5 or so.
take all that stuff and put it in the pot with the lentils, pour in can of coconut milk. stir. simmer for 15 minutes or so partly covered. then add the lime juice and any additional salt needed.

gonna do some baby reds and some corn on the cobb. Put that shit with some rib eye or chuck eye and we have a winner. DOAD, I HOPE WE GET TO GRILL DOWN AT SOME POINT.
I like to cook green, red peppers, broccoli, green & yellow squash, asparagus, baby carrots in italian dressing with garlic and a fresh squeezed orange, either on the grill, in the oven or in a frying pan. it's a great meal on its own since it doesn't need a side. wish i bought this stuff at the store yesterday.

i now know what i'm making today...you think it matters if i use reg lentils?
